Should I take Advance Placement Biology even though some of the things taught go against my religious beliefs?

Yes you should as the fact that you don't accept evolution means that you need to learn some more about biology including the field of evolution to understand that evolution is both a fact and a theory and that you either accept it or you don't accept it. You can accept the theory of evolution and still be religious so long as you take some of the aspects of your religion metaphorically. Also evolution is actually used in the technology industry in order to find the best design for some of the products we use.
